Peach Pecan Muffin Recipe

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup oil
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup fresh peaches
  • 3 tablespoons pecans chopped

Instructions

  • Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners or lightly grease each cup.
  • Peel, pit, and dice the peaches into small pieces.
  • In a large bowl, whisk together the flour, sugar, salt, baking powder, and baking soda.
  • In a separate bowl, whisk the eggs, oil, and vanilla until combined.
  • Add the wet ingredients to the dry ingredients and stir just until combined. Do not overmix.
  • Gently fold in the diced peaches.
  • Divide the batter evenly among the 12 muffin cups, filling each approximately two-thirds full.
  • Sprinkle the chopped pecans over the batter.
  • Bake for 25–28 minutes, or until the tops are lightly golden and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  • Cool in the pan for 5 minutes, then transfer the muffins to a wire rack.
