Easy Southwestern Chicken Salad Recipe

Easy Southwestern Chicken Salad Recipe is made with tender chicken, fresh vegetables and a mild spicy dressing. This easy chicken salad is full of southwestern flavor and is perfect for light dinners or lunch. Also great for meal planning, picnics and takealong lunches.

Ingredients

  • 1 head Romaine lettuce washed
  • 1/2 bell pepper chopped
  • 1 small bunch cilantro chopped (about 1/4 cup chopped)
  • 1/4 cup chopped red onion
  • 1 15 oz can black beans rinsed and drained
  • 1 cup Mexicorn or sweet corn drained
  • 1/3 cup cherry tomatoes halved
  • 1 package taco seasoning
  • 2 cups cooked chicken shredded

Southwestern Salad Dressing

  • 1/2 cup Plain Greek Yogurt
  • 1/2 cup salsa
  • 1 tablespoon lemon juice
  • 1 tablespoon water

Instructions

  • In a large bowl, shred Romaine lettuce.
  • Add bell pepper, cilantro, onion, black beans, corn and tomatoes.
  • Set aside.
  • In a bowl or large food bag, combine chicken and taco seasoning.
  • Mix until well-coated.

Dressing

  • Mix together in a small bowl or jar and chill for a few minutes, if possible before serving.
  • Serve salad, topped with chicken and dressing.
