Cucumber Roll Ups
These easy Cucumber Roll Ups are a refreshing and healthy snack. Thinly sliced cucumbers are spread with a buffalo chicken and cream cheese filling, then rolled up and topped with dill.

- 1 large cucumber
- ½ cup cooked and shredded chicken
- 1/4 cup buffalo sauce
- 1/4 cup mayonnaise
- 1/4 cup diced celery
- 1/4 cup diced red onion
- Salt and pepper to taste
- Fresh chives and dill for garnish
Peel the cucumber and slice it lengthwise using a vegetable peeler or a mandoline slicer to create thin strips (6 or 7)
Pad the cucumber dry and spread mayonnaise then place diagonally the shredded chicken, buffalo sauce, celery, red onion add salt, and pepper.
Drizzle buffalo sauce over chopped veggies and chicken
Roll the cucumber strip tightly around the filling to create a roll.
Secure the roll with a toothpick if necessary. Cut it into 6 or 7 rolls, thinner or thicker according to your preferences.
Arrange the buffalo chicken cucumber rolls on a serving plate.
Garnish with chopped chives and dill.
Serve and enjoy as a delicious and refreshing appetizer.
Number of roll ups will depend on the size of the cucumber.
This recipe can easily be doubled.
