Chocolate Dipped Peppermint Cookies
These delicious Chocolate Peppermint Cookies are a fun and festive Christmas dessert. Soft chewy, chocolate cookies are dipped in white chocolate and topped with crushed peppermint. These easy Christmas cookies are made quickly with the help of cake mix and are perfect as a Christmas dessert or as a Christmas cookie exchange cookie.

- 1 box chocolate cake mix
- 2 eggs
- 1/2 cup vegetable oil
- 12 oz. white chocolate chips
- 4-5 candy canes crushed
Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment, and set aside.
In a large mixing bowl, fold together the cake mix, eggs, and oil. **Important, the dough should be fairly sticky before baking, if it isn't, add a splash of water and fold together until everything is well combined. This will help the cookies spread more like normal cookies.
Use a 1 1/2 inch cookie scoop to scoop the dough onto the baking sheet.
Bake 9-11 minutes.
Allow the cookies to cool completely.
Add the white chocolate chips to a microwave safe bowl, and heat on 30 second increments, stirring well between, until melted.
Dip half of each cookie into the white chocolate, and sprinkle with crushed candy canes.
Allow the cookies to set until the chocolate is solid & enjoy.
- Cool your cookies on a wire rack to ensure that they stay soft and chewy.
- Store your cookies in an airtight container or wrapped in plastic wrap, and keep them at room temperature for up to 5 days.
- For extra chocolate flavor, add some cocoa powder to the dry cake mix before adding the wet ingredients.
- For smaller cookies, use a ½ tablespoon cookie scoop instead of a 1 tablespoon cookie scoop.
- Bake your cookies for 8-10 minutes for soft and chewy cookies or 10-12 minutes for slightly crispier cookies.
