Chocolate Chip Loaf Cake

- ¾ cup butter softened
- 1 cup sugar
- 2 eggs
- 1 ¾ cups flour
- 2 egg yolks
- 1 ripe banana
- ½ tablespoon vanilla extract
- ¼ teaspoon salt
- 1 cup semisweet chocolate chips
Preheat the oven to 325 degrees.
Grease a 9-inch loaf pan.
In a large bowl or bowl of a stand mixer, beat butter and sugar for 5 minutes or until fluffy.
Slowly add in eggs, egg yolks, banana, almond or vanilla extract. Beat on low speed until incorporated, about 3 minutes.
Add in flour, a little at a time. Beat on low, until batter is combined.
Fold in chocolate chips.
Spread batter into the prepared loaf pan and bake for 45-60 minutes or until a toothpick inserted comes out clean.
- Use room temperature ingredients, for best results.
- Be sure to scrape the sides of the bowl often while mixing to ensure even blending.
- You can add a sheet of parchment paper into the loaf pan before baking for easy removal.
