Chocolate Chip Loaf Cake

Equipment

  • electric mixer or stand mixer with paddle attachment

Ingredients

  • ¾ cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1 ¾ cups flour
  • 2 egg yolks
  • 1 ripe banana
  • ½ tablespoon vanilla extract
  • ¼ teaspoon salt
  • 1 cup semisweet chocolate chips

Instructions

  • Preheat the oven to 325 degrees.
  • Grease a 9-inch loaf pan.
  • In a large bowl or bowl of a stand mixer, beat butter and sugar for 5 minutes or until fluffy.
  • Slowly add in eggs, egg yolks, banana, almond or vanilla extract. Beat on low speed until incorporated, about 3 minutes.
  • Add in flour, a little at a time. Beat on low, until batter is combined.
  • Fold in chocolate chips.
  • Spread batter into the prepared loaf pan and bake for 45-60 minutes or until a toothpick inserted comes out clean.

Notes

  • Use room temperature ingredients, for best results.
  • Be sure to scrape the sides of the bowl often while mixing to ensure even blending.
  • You can add a sheet of parchment paper into the loaf pan before baking for easy removal.
  • Baking time may vary depending on altitude. Use a toothpick to check for doneness.
  • Serve with a scoop of vanilla ice cream or whipped cream.
  • Store in an airtight container.
