Chicken Florentine Casserole Recipe

This easy Chicken Florentine Casserole recipe is ready in about 30 minutes. Tender chicken is combined with sautéed spinach and tomatoes and pasta in a garlic cheese sauce. So delicious!

Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1/4 cup chopped onions
  • 1 clove garlic, crushed
  • 2 cups penne pasta
  • 4 cups spinach leaves 
  • 2 tomatoes, chopped
  • 1 teaspoon Italian Seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic salt
  • 1/2 cup heavy cream
  • 3/4 cup Mozerella Cheese
  • 1/3 cup Parmesan Cheese

Instructions

  • Heat oven to 375°
  • Cut chicken into 1" pieces.
  • Cook chicken breasts in a skillet in 1 tablespoon of each butter and olive oil over medium heat. Cook 6 to 8 minutes, until light golden brown and set aside in a casserole dish.
  • Cook and drain pasta as directed on package while chicken is cooking and drain. Place in the casserole dish or bowl and set aside.
  • Sauté onions, tomatoes, salt, pepper, garlic salt, Italian seasoning and garlic in skillet with 3 tablespoons butter on medium-high heat for 3-4 minutes until onions are translucent.
  • Add and sauté spinach over medium-low in the same skillet for about one minute and add to the vegetable mixture to the casserole dish.
  • Add heavy cream and the Mozzarella cheese and Parmesan cheese.to the vegetable and pasta and mix well.
  • Top the pasta with a little additional cheese if desired.
  • Bake 10-15 minutes.

Notes

I mix it all together in the casserole dish, but you could also mix everything in a large bowl and then add it to the casserole dish prior to baking.
Store leftovers in an airtight container.
Serve with additional Parmesan cheese and red pepper flakes if desired.
