Equipment

  • large skillet, pot or dutch oven

Ingredients

  • 16 ounce box pasta, any shape (I used mini penne)
  • 2.25 pounds ground beef
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 (15 ounce can diced tomatoes
  • 2 cups beef broth
  • 2 cup shredded cheddar cheese divided
  • 1/2 cup ketchup
  • 1/4 cup mustard
  • Salt and black pepper to taste
  • Chopped lettuce for garnish (optional)
  • Quartered cherry tomatoes for garnish (optional)
  • Chopped pickles for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions

  • Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • In a large skillet, brown the ground beef with the onion over medium heat, breaking it up with a spoon as it cooks.
  • Add the minced garlic to the skillet with the beef and cook for 1 minute.
  • Stir in the diced tomatoes, beef broth, ketchup, and mustard. Season with salt and pepper to taste.
  • Simmer the mixture for 10-15 minutes, until the sauce has thickened slightly.
  • Add the cooked pasta to the skillet and toss to coat it evenly with the sauce.
  • Stir in 1 cup of the shredded cheddar cheese.
  • Sprinkle the remaining cheddar cheese over the top of the pasta and cover the skillet until the cheese is melted.
  • Serve the Cheeseburger Pasta hot, garnished with lettuce, tomatoes, pickles and sesame seeds if desired.

Notes

  • Cook the pasta ahead of time and store in the refrigerator.
  • Cook the pasta al dente and be careful not to overcook. You can boil extra pasta and save it for another dish.
  • Make a double batch and freeze it for later. Cheeseburger pasta is a great dish to make ahead of time. Once assembled, you can freeze it for up to 3 months. Thaw overnight in the refrigerator before baking.
  • Store leftover cheeseburger pasta in an airtight container in the refrigerator.
