Cake Mix Banana Muffins

These cake mix banana muffins are made with a handful of ingredients for an easy breakfast bread. Soft bakery style muffins are easily made from a box cake mix and bananas. So simple to make and delicious as a breakfast or lunch box snack.

Ingredients

  • 1 15 ounce box yellow cake mix
  • 3 bananas mashed, medium overripe
  • 2 eggs
  • 6 tablespoons vegetable or canola oil
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Prepare a muffin tin with cupcake liners spritzed with nonstick cooking spray.
  • In a large bowl, whisk together the mashed bananas, eggs, oil, vanilla, and cinnamon.
  • To the batter, add the yellow cake mix. Mix the batter until evenly blended but do not overmix.
  • Divide the batter between the 12 muffin cups.
  • Bake for 20 to 23 minutes or until a toothpick inserted in the middle returns clean.
  • Place the muffin tin on a wire rack and cool slightly. Serve warm.

Notes

  • Use overripe bananas for a stronger banana flavor and natural sweetness.
  • Spritz cupcake liners with non-stick cooking spray for easy removal.
  • Do not overmix the batter to maintain a light and fluffy texture.
