Applesauce Muffins

These easy Applesauce Muffins are light and fluffy and have just the right amount of apple flavor. Made from scratch with homemade or store-bought applesauce these tasty homemade muffins are ready in about 30 minutes.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 1 teaspoon baking soda
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg room temperature
  • 1 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • ½ cup raisins optional

Instructions

  • Preheat oven to 350 degrees F
  • Fill muffin tin with liners
  • In a medium bowl, whisk together flour, cinnamon, allspice and baking soda
  • In a large mixing bowl, beat together butter and sugar until creamy and fluffy
  • Beat in eggs, applesauce and vanilla until smooth
  • In a small bowl, add raisins and about 2 tablespoons of flour mixture and toss to coat
  • Gradually add dry ingredients to wet ingredients just until moistened
  • Fold in raisins
  • Divide batter into muffin tin using a cookie dough scoop
  • Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean
  • Cool on a wire rack
  • Serve room temperature or warm
  • Store leftovers in airtight container

Notes

  • Use cupcake paper liners to save on clean-up. 
  • Store leftovers in an airtight container.
  • You can make these as mini muffins using a mini muffin pan
  • You can skip the raisins if you wish, or substitute with chocolate chips.
