Pistachio Pudding Cookies

These easy Pistachio Pudding Cookies are full of pistachio flavor and taste delicious. The perfect cookie for St. Patrick's Day or Christmas.

Ingredients

  • ¾ cup unsalted butter softened
  • ¾ cup sugar
  • ¼ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 drop / dollop green food coloring
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 3.4 oz pkg Pistachio Pudding mix
  • 1 ⅔ cup all purpose flour
  • 1 cup white chocolate chips
  • ½ cup chopped pistachio pieces

Instructions

  • Heat oven to 350 degrees. Line your baking sheet(s) with parchment and set aside.
  • In the bowl of a stand mixer, combine the sugar, brown sugar and softened butter. Cream until smooth, about 2-3 minutes.
  • Add in the egg, vanilla and green food coloring - just a drop! You can always add more but we want a pale green color here. Mix until combined.
  • Add in the salt, baking soda, pudding mix and flour. Mix until smooth. If your mixer is struggling, switch to the paddle attachment - the dough is thick.
  • Add in the white chocolate chips and chopped pistachio pieces. Mix until incorporated.
  • Scoop out a tablespoon of dough and roll into a ball. Place on the baking sheet about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges are just slightly browned.
  • Allow to cool completely.

Notes

  • Prepare the pistachio pieces by chopping then ahead of time so they are ready to go when you are.
  • Use room temperature butter, not melted or cold.
  • For soft cookies, do not overbake the cookies. They should be slightly golden brown around the edges but still soft in the center.
  • For even baking, make sure cookies are of the same shape and size.
  • Let cookies cool completely before serving.
Storage: Cookies can be stored in an airtight container for up to 3 days or frozen for 3 months.
