Lemon Blueberry Cake

A delightful lemon and blueberry cake. Perfect for a breakfast or brunch or after-school snack

  • 1 box pound cake mix
  • 1/2 cup butter
  • 2 eggs
  • 1 cup blueberries fresh or frozen
  • 2 tablespoons fresh lemon juice


  1. Preheat oven to 400°
  2. Rinse and drain blueberries and set aside
  3. Melt butter in microwave and place in a mixing bowl.
  4. Add 1 box of pound cake mix, and eggs. Blend.
  5. Add lemon juice and then fold in rinsed blueberries gently.
  6. Pour into a greased loaf pan.
  7. Bake 55 - 60 minutes until toothpick comes out clean
