Chicken Tetrazzini Recipe

Ingredients

  • 8 oz. fettuccine or spaghetti
  • 1/4 cup butter
  • 1 1/2 cups mushrooms sliced
  • 2 1/2 cups cooked chicken or turkey, diced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons flour
  • 1/3 cup Parmesan cheese grated
  • 1 tablespoon bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1 tablespoon chopped parsley

Instructions

  1. Preheat oven to 350*.
  2. On stovetop, cook and drain fettuccine (or spaghetti) noodles.
  3. Place in greased casserole pan.
  4. Top with diced chicken or turkey.
  5. In a saucepan melt butter and cooked sliced onions until tender.
  6. Add flour and reduce to low heat.
  7. Slowly add broth until boiling.
  8. Remove from heat and add heavy cream,
  9. Add salt, pepper and nutmeg to cream mixture.
  10. Add to cooked fettuccine mixture and mix together.
  11. Top with Parmesan and bread crumbs.
  12. Cover and cook in 350 oven 30-40 minutes.
  13. Remove foil and cook an additional 5-7 minutes until top is bubbly.
  14. Top with chopped parsley and serve.
