In a medium mixing bowl, stir together graham cracker crumbs, melted butter, and sugar. Set aside.
In a large mixing bowl, beat cream cheese with a mixer, until smooth. Add sweetened condensed milk and vanilla, and mix well to combine.
To assemble the parfaits, start with a small layer of the cheesecake mixture, add a layer of graham cracker crumbs (about half, reserve the other half for the next layer),
Add a layer of chopped strawberries.
Add another cheesecake layer, dividing the rest of the mixture evenly between the cups.
Top with a final layer of the graham cracker mixture. If desired, top with whipped cream or cool whip, and additional fresh strawberries.
