  • 2 lbs boneless skinless chicken breasts
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1.25 oz packet Fajita Seasoning
  • 10 oz can Rotel diced tomatoes with green chiles
  • Cilantro chopped for garnish
  • Small flour tortillas

Instructions

  • Wash your vegetables and cut them into strips. Mince the garlic.
  • Arrange the chicken breasts in the bottom of the slow cooker.
  • Add the peppers, onions, minced garlic, and olive oil to a bowl and toss to coat. Dump evenly over the chicken.
  • Sprinkle the fajita seasoning, then pour the Rotel in.
  • Cook on high for 3-4 hours or low 6-8 hours.
  • Remove the chicken, then cut into strips. Add the chicken back to the slow cooker, then mix everything together.
  • Serve on flour tortillas topped with fresh chopped cilantro, and your favorite toppings.
