Simple Shepherds Pie Ground Beef Recipe

A simple Shepherd's Pie recipe with hamburger, carrots, corn and potatoes baked into a casserole that is sure to be a classic weeknight favorite. Technically called Cottage Pie, this easy ground beef casserole is easier on the budget than classic Shepherd's Pie. So delicious and easy to make ahead too!

Ingredients

  • 1/3 cup onion chopped
  • 1 1/2 lbs. ground beef
  • 1 teaspoon vegetable oil
  • 1 cup beef broth
  • 3 tablespoons tomato paste
  • 1/2 can Mexicorn
  • 1 cup cooked carrots chopped
  • 1 clove garlic
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons flour
  • 2 cups mashed potatoes
  • butter for greasing pan

Instructions

  • Preheat oven to 375 and butter a pie baking dish
  • Saute beef and onions in oil in a skillet over medium heat until ground beef is browned.
  • Drain beef and onions.
  • Add tomato paste, Mexicorn, carrots, garlic, paprika, salt, pepper to meat mixture.
  • In a separate bowl, mix together beef broth and flour until flour is dissolved.
  • Add broth and flour roux to beef mixture and heat over medium-high heat 5 minutes.
  • Pour into pie pan. (omit this step if you use a cast iron or oven-safe skillet)
  • Top with mashed potatoes by adding spoonfuls into beef mixture. If you want to use a pasty bag for potato dollops. Just cover the casserole with half of the potatoes and use the pastry bag and tip to add the other half of the potatoes on top.
  • Bake 25-28 minutes until tops of potatoes are light brown.
  • Cool a few minutes before serving.

Notes

Tip 1: For a golden, slightly crispy potato topping, broil the pie for the last 2-3 minutes of baking. Keep a close eye on it!
Tip 2: Store leftovers in an airtight container in the refrigerator for up to 3 days. This reheats beautifully in the microwave or oven.
