This easy iced toffee cookie recipe will be a new favorite any time of year. Soft toffee cookies with a light icing.

Iced Toffee Cookie Recipe

Ingredients

  • 1 stick butter softened
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 ¼ cup flour
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 8 oz bag toffee bits

Instructions

  1. Preheat oven to 350 degrees. Line cookie sheet with parchment paper.
  2. In a mixing bowl blend butter, sugar, brown sugar and vanilla until well blended.
  3. Add eggs and blend.
  4. In s separate bowl, mix together dry ingredients.
  5. Add dry ingredients to butter mixture gradually and blend well.
  6. Fold in toffee bits.
  7. Drop by rounded teaspoons onto parchment paper, about 2 inches apart, because they will spread.
  8. Bake 12-14 minutes until golden brown.
  9. Let cool
