- 1 cup pumpkin puree
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 3/4 cup vegetable oil
- 2 eggs
- 1/2 tsp vanilla extract
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1 1/4 tsp pumpkin pie spice
- 1/4 tsp salt
- 1 1/2 cups all purpose flour
- 1 1/2 cups semi sweet chocolate chips
Preheat your oven to 400 degrees Fahrenheit, and add cupcake liners to a muffin tin.
In a large mixing bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, and vanilla extract.
Add the eggs and whisk until combined.
Add the baking powder, baking soda, pumpkin pie spice, and salt.
Slowly add the all purpose flour, folding all of the ingredients together.
Once there are no flour streaks, fold in the chocolate chips.
Fill the cupcake liners about 2/3 full.
Bake for 17-20 minutes.
Store leftovers in an airtight container.
