This delicious poolside dip is made with simple ingredients. A ranch dip with cream cheese, olives and peppers for a flavorful addition to your appetizer table.

Ingredients

  • 16 oz cream cheese softened (2 - 8 oz packages)
  • 1 oz packet dry ranch seasoning
  • 1 red bell pepper finely diced
  • 1 jalapeno pepper finely diced
  • 1 - 15 oz can corn drained
  • 1 - 4.25 oz can chopped black olives drained
  • 2 green onions diced - for topping

Instructions

  • Directions:
  • Cut the red pepper and the jalapeno pepper, removing the stems and seeds. (If you want a spicier dip, keep the jalapeno seeds.)
  • Dice the green onions, set aside.
  • Mix the cream cheese and ranch seasoning in a large bowl using a hand mixer, until light and creamy.
  • Add the diced red pepper, diced jalapeno, corn, and olives to the bowl, and stir to combine.
  • Spoon mixture into serving bowl or dish, and top with diced green onions.
  • You can serve it right away, or refrigerate until ready to serve.
  • Serve with crackers, veggies, or chips.

Notes

    • Ensure the cream cheese is at room temperature for easy mixing.
    • For a heartier version, stir in 1/2 cup black beans or 1/2 cup Mexicorn
    • For the smoothest texture, use a hand mixer to blend the cream cheese and ranch seasoning until creamy.
