Preheat your oven to 350 degrees Fahrenheit.
Spray a muffin tin with non-stick spray.
Add the wonton wrappers to the tin, by pressing one down into a cup of the tin, and then a 2nd, rotating slightly to alternate where the corners stick up.
Bake the cups for 5 minutes, and remove from the oven.
In a medium mixing bowl, use a fork to soften the cream cheese.
Fold in 1/2 cup of bacon pieces, 1 cup of shredded cheese, and the diced jalapeno.
Divide this mixture evenly between the cups.
Top with the remaining shredded cheese and bacon pieces.
Bake for 10-12 minutes, until everything is melted.
If desired, top with a slice of fresh jalapeno.
