Ingredients

  • For the Crust:
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 1/4 cup white sugar
  • 1 tablespoon Monin gingerbread syrup
  • For the Cheesecake Batter:
  • 16 oz 2 blocks cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 tablespoons Monin gingerbread syrup
  • 5 gingerbread cookies crumbled (any brand)
  • For the Topping:
  • Cool Whip or whipped cream
  • Gingerbread man sprinkles

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper for easy removal.
  • Make the Crust: In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and gingerbread syrup until well combined. Press the mixture evenly into the bottom of the prepared baking dish to form a crust layer.
  • Prepare the gingerbread layer: In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract, eggs, and gingerbread syrup, and beat again until fully combined. Gently fold in the crumbled gingerbread cookies.
  • Assemble and Bake: Pour the cheesecake filling over the prepared crust, spreading it out evenly. Bake for 30-35 minutes or until the edges are set and the center has a slight jiggle. Let it cool to room temperature, then refrigerate for at least 2 hours.
