Cowboy Nachos

- 1 lb ground beef
- ½ cup diced white onion
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 tsp cumin
- 1 9 oz bag corn tortilla chips
- 1 cup jarred queso
- 1 cup shredded taco blend cheese
- ½ cup BBQ sauce
- ¼ cup crispy fried onions
- 1 jalapeño diced
- ¼ cup sour cream
Fresh cilantro
- Optional: 2 tbsp water
Preheat the oven to 400°F. Line a baking sheet with parchment paper or foil.
In a large skillet over medium-high heat, cook the ground beef and diced onion until browned, about 7 to 10 minutes. Drain excess grease.
Stir in garlic powder, onion powder, salt, pepper, paprika, and cumin. Add 2 tbsp of water if needed to help mix in the seasonings. Set aside.
Spread tortilla chips in an even layer on the prepared baking sheet. Drizzle with queso. Add seasoned beef, then sprinkle with shredded cheese and drizzle with BBQ sauce.
Bake for 8 to 10 minutes, uncovered, until cheese is melted and everything is heated through.
Remove from the oven and top with crispy onions, sliced jalapeños, chopped cilantro, and a dollop of sour cream. Serve immediately.
