Cowboy Nachos

These easy Cowboy Nachos are loaded with seasoned beef, beans, cheese, and all your favorite toppings. Perfect for game day, parties, or a quick weeknight dinner, they come together fast and feed a crowd!

Ingredients

  • 1 lb ground beef
  • ½ cup diced white onion
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • 1 tsp cumin
  • 1 9 oz bag corn tortilla chips
  • 1 cup jarred queso
  • 1 cup shredded taco blend cheese
  • ½ cup BBQ sauce
  • ¼ cup crispy fried onions
  • 1 jalapeño diced
  • ¼ cup sour cream
Fresh cilantro
  • Optional: 2 tbsp water

Instructions

  • Preheat the oven to 400°F. Line a baking sheet with parchment paper or foil.
  • In a large skillet over medium-high heat, cook the ground beef and diced onion until browned, about 7 to 10 minutes. Drain excess grease.
  • Stir in garlic powder, onion powder, salt, pepper, paprika, and cumin. Add 2 tbsp of water if needed to help mix in the seasonings. Set aside.
  • Spread tortilla chips in an even layer on the prepared baking sheet. Drizzle with queso. Add seasoned beef, then sprinkle with shredded cheese and drizzle with BBQ sauce.
  • Bake for 8 to 10 minutes, uncovered, until cheese is melted and everything is heated through.
  • Remove from the oven and top with crispy onions, sliced jalapeños, chopped cilantro, and a dollop of sour cream. Serve immediately.
