Chicken Alfredo Soup

This creamy and comforting Chicken Alfredo Soup is flavorful and delicious. Tender chicken is simmered in a creamy Alfredo sauce, herbs and spinach for a delicious soup. This easy soup recipe is made with a handful of ingredients and is perfect with a salad and a side of crusty bread.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, diced
  • 1 medium onion chopped
  • 2 Roma tomatoes chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1 package 9 ounces refrigerated cheese tortellini
  • 2 cups fresh chopped spinach

Instructions

  • In a large pot, heat the olive oil over medium heat. Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken and keep warm.
  • In the same pot, add the chopped onion and tomatoes and cook until soft, about 4 minutes. Add the minced garlic and cook for another minute.
  • Pour in the chicken broth and bring to a boil.
  • Reduce the heat and add the heavy cream, Parmesan cheese, thyme, basil, salt, and pepper. Stir until the cheese is melted and the soup is smooth.
  • Add the tortellini and cook according to the package instructions until tender, about 7-9 minutes.
  • Stir in the cooked chicken and chopped spinach. Cook for another 2-3 minutes until the spinach is wilted.
  • Serve hot, garnished with black pepper and additional Parmesan cheese, if desired.
