In a medium mixing bowl, whisk together egg whites, vanilla, sugar, brown sugar, salt, and cinnamon.
Add mixed nuts into a large mixing bowl, and pour the sugar mixture over top. Toss the nuts in the mixture to evenly coat.
Spray the crock pot, and pour the nuts in.
Cook on low 2-3 hours, stirring occasionally.
Add a piece of parchment paper to a large baking sheet.
Spread the nuts over the prepared baking sheet in a single layer.
Allow the nuts to cool and set.
Store in an airtight container for up to one week.
