Coconut Lime Cupcakes

Easy coconut and lime cupcakes made from a boxed cake mix. Also includes a simple tutorial on toasting coconut on the stove-top.

Ingredients

  • 1 box lemon cake mix
  • ½ cup lime juice
  • ½ cup water
  • ½ cup melted butter
  • 2 eggs
  • 2-3 drops food coloring optional

Instructions

  • Preheat oven to 350 degrees and prepare a cupcake pan with liners.
  • Combine cake mix and other ingredients in a large bowl.
  • Mix with a hand or stand mixer until well blended.
  • Pour into a prepared cupcake pan and bake 16-18 minutes.
  • Let cool before frosting.
