Slow Cooker White Chicken Chili

- 2 to 3 cups boneless skinless cooked chicken, cut into bite-size pieces
- 2 cups low sodium chicken broth
- 1 white onion diced
- 1 stalk celery diced
- 2 cloves minced garlic
- 1 16 oz jar salsa verde
- 1 jalapeño seeded and diced
- 2 15 oz cans cannellini beans, rinsed and drained
- 1 15oz can pinto beans, rinsed and drained
- 1 tablespoon ground cumin
- 1 teaspoon dried oregano
- ¼ teaspoon red pepper
- ¼ teaspoon black pepper
- 1 cup shredded Monterey jack cheese
- 2 tablespoons chopped fresh cilantro for garnishing if desired
Combine all ingredients in the slow cooker EXCEPT for the cheese.
Cook on high for 2 hours or low for 4 hours.
Stir in the cheese until melted and smooth.
Serve topped with additional cheese, sour cream, and/or chopped cilantro, if desired.
