Baked Butternut Squash

An easy recipe for sweet baked butternut squash with brown sugar, baked in the oven for a sweet vegetable side dish for a fall supper.

Ingredients

  • 1 butternut squash
  • 3 tablespoons butter melted
  • cup brown sugar
  • pinch of salt

Instructions

  • Preheat oven to 400 °.
  • Wash the exterior of the squash and pat dry. Even if you are going to only eat the interior, you always want to wash them to avoid contamination with a knife.
  • Cut off ends fo the squash. If desired, peel the squash with a potato peeler.
  • Cut squash in half and remove seeds.
  • Cut squash into cubes (about 1 - 1 ½") and place into a casserole dish or baking pan.
  • In a cup or bowl, mix butter and sugar together, then pour over cubes and toss to coat.
  • Bake in oven 20  minutes.  Stir squash with a large spoon and bake an additional 20-25 minutes. Sprinkle with salt and serve.

Notes

Store leftovers in an airtight container.
You can purchase precut squash at the grocery store to save time.
You can double this recipe and freeze half for later.
