- 1 can (15 oz) Chick Peas, rinsed and drained
- 1 cup cherry tomatoes, halved
- ½ bell pepper, chopped
- ¼ cup chopped red onion
- 1 cucumber, chopped
- 1 tablespoon chopped parsley
- 1 clove garlic, minced
- ½ cup olive oil
- ¼ cup cider vinegar
- 2 tablespoons lemon juice
- ½ teaspoon salt
In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic.
In a cup, mix together olive oil, vinegar, lemon juice, and salt.
Pour over salad and toss to coat well.
Let stand for at least 15 minutes to allow the flavors to blend.
