Confetti Cookies

Equipment

  • Mixer (handheld or stand mixer)
  • Baking Sheets
  • Parchment Paper

Ingredients

  • 4 ounces cream cheese (half of a stick)
  • ½ cup unsalted butter
  • 1 cup granulated sugar
  • 1 egg
  • 2 teaspoon vanilla
  • 1 ¾ cup all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup rainbow sprinkles

Instructions

  • Preheat the oven to 350.
  • Line a baking sheet with parchment paper and set it aside.
  • Cream together cream cheese, butter, and granulated sugar until light and fluffy.
  • Add one egg and vanilla and mix until incorporated.
  • Add the flour, baking soda, and salt, and mix until well combined.
  • Using a small cookie scoop, scoop up dough and place into sprinkles. Roll one side in sprinkles and press down.
  • Pick up and place sprinkle side up on the parchment-lined baking sheet.
  • Space cookies about an inch apart on the sheet and place them in the oven.
  • Bake 10-12 minutes.

Notes

This recipe can be made with or without sprinkles.
