Egg Breakfast Sandwich
This easy Egg Breakfast Sandwich recipe is perfect for mornings when you want something with protein and eggs. Easy to make ahead and warm up in the microwave too.

- 2 eggs
- 3 slices bacon
- 1 oz sliced cheese
- 4 slices bread
- 1 teaspoon butter
Prepare bacon in microwave or on stovetop and drain.
Toast bread.
Melt butter in a saucepan and fry the egg 2-3 minutes over medium heat until white is set.
Just before turning over the egg, break the yolk with the spatula.
Top egg with small slice of cheese and cook an additional 45-75 seconds.
Place egg and cheese on one slice of bread. Add 1 ½ strips of bacon. Top with a second slice of bread and serve.
