Orange Muffin Recipe
A light buttermilk orange breakfast muffin, perfect for breakfast or brunch.
- 1 stick butter
- ¾ cup sugar
- 2 teaspoons orange juice
- 2 eggs
- 2 cups flour
- 1 teaspoon baking soda
- 1 tablespoon orange zest
- 1 teaspoon salt
- 1 cup buttermilk
1. Preheat oven to 375°,
2. Mix together butter, sugar and eggs in a bowl and blend well.
3. Add dry ingredients, orange zest, orange juice, and buttermilk. Mix well.
4. . Prepare the muffin tin with butter or line with baking cups.
5/. Bake for 22-25 minutes until a toothpick comes out clean.
