Old Fashioned Banana Bread

A lovely light banana bread recipe

Equipment

  • 1 hand mixer or electric mixer
  • 1 large mixing bowl
  • 1 loaf pan
  • 1 Rubber Spatula

Ingredients

  • 3 ripe bananas
  • 2 eggs
  • cup sour cream
  • ¼ cup sugar
  • 1 ¾ cup flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ cup melted butter
  • ½ cup chopped nuts
  • 1 tablespoon brown sugar (optional)
  • butter, shortening or oil for greasing pan

Instructions

  • Preheat oven to 350°.
  • Grease a loaf pan with butter, shortening or oil
  • In a large bowl, peel and mash bananas.
  • Add to bowl with mashed bananas the remaining wet ingredients- eggs, butter and sour cream . Mix well with mixer on medium speed. Use a rubber spatula to scrape the sides of the bowl often.
  • Add flour, sugar, salt, baking soda, baking powder and nuts and blend.
  • Pour batter into loaf pan.
  • Sprinkle with brown sugar, if desired.
  • Bake for 1 hour or until toothpick comes out clean.

Notes

You can make this banana bread recipe without baking soda if you like. just omit it and add a tablespoon of baking powder to this recipe.
I like to mix the dry ingredients in a separate bowl first and then add to wet ingreients. 
Store in an airtight container or covered with plastic wrap for 3-4 days.
You an freeze banana bread if wrapped in plastic wrap and foil.
