Broccoli Cheese Soup

This easy Broccoli Cheese Soup recipe is perfect for a cold night.

Ingredients

  • 4 tablespoons butter
  • ½ cup chopped onion
  • 2 stalks celery chopped
  • 1 clove garlic, minced
  • ¼ cup flour
  • 1 cup milk (regular or 2%)
  • 4 cups chicken broth
  • 2 cups broccoli, cooked and chopped
  • 1 ½ cups shredded Cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 pinch nutmeg optional

Instructions

  • In a medium saucepan, melt butter over medium-high heat.
  • Add onions, celery and garlic and cook 3 to 4 minutes, stirring occasionally, until tender.
  • Add flour to pan and cook another 2 minutes.
  • Add broth, milk, salt, pepper and nutmeg and heat thoroughly.
  • Cook soup on low heat, stirring occasionally,, about 10-15 minutes.
  • Serve into bowls and top each bowl with ¼ cup of shredded cheese.

Notes

Alternatively, you can add cheese to the soup and then serve, but I like the presentation of the bowls with the cheese on top.
