Peach Pecan Muffin Recipe

Ingredients

  • 2 cups flour
  • 1 cup sugar
  • 2 eggs
  • ½ cup oil
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 cup fresh peaches
  • 3 tablespoons pecans chopped

Instructions

  • Preheat oven to 375
  • Line pan with baking cups or grease muffin tin
  • Peel peaches, remove seed.
  • Chop peaches into small chunks.
  • Mix the dry ingredients together in a mixing bowl.
  • Add eggs and oil to dry ingredients.
  • Gently fold in peaches.
  • Pour into muffin tins about half full.
  • Sprinkle with chopped pecans.
  • Bake for 25-28 minutes.
