4th of July Cookies

Ingredients

Cookie Ingredients:

  • 1 cup unsalted butter softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 ½ cups buttermilk
  • 2 teaspoons vanilla
  • 5 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Chocolate Ganache Ingredients:

  • ½ cup semi-sweet chocolate chips
  • 1 cup heavy whipping cream

White Glaze Ingredients:

  • 1 cup confectioners sugar
  • 1 ½ Tablespoon whole milk
  • ½ teaspoon vanilla
  • Sprinkles red/white & blue

Instructions

  • Cookies:
  • Using an electric mixer and a mixing bowl add the butter and both sugars into the bowl.
  • Cream these together for about 1 minute.
  • Add in the egg, buttermilk, and vanilla.
  • Continue to mix until the ingredients are smooth.
  • Combine the dry ingredients.
  • Add ½ of the dry ingredients to the mixing bowl.
  • Mix well.
  • Add the remaining dry ingredients to the mixing bowl.
  • (Dough will be stickier than normal cookie dough.)
  • Cover the bowl with plastic wrap.
  • Place the bowl in the refrigerator for at least 1 hour.
  • Preheat the oven to 375 degrees.
  • Prep the cookie sheet with parchment paper.
  • Prep a small ice cream scoop, small round cookie cutter, and your hands with non-stick baking spray.
  • Using the ice cream scoop make 2 scoops for each cookie.
  • Roll 2 scoops together to form 1 cookie ball.
  • Use your hands to flatten the cookie ball into a flat cookie.
  • Make a hole in the center of each cookie by using a small round cookie cutter.
  • Bake at 375 degrees for 9-10 minutes.
  • Allow the baked cookies to cool on the cookie sheet for about 2 minutes.
  • Carefully move the cookies to a wire rack to cool completely.
  • Frost with either the Chocolate or White icing and decorate with patriotic sprinkles.
  • Transfer the remaining cookie dough back to the refrigerator.

Chocolate Ganache Directions:

  • Pour the cup of heavy whipping cream in a small pot.
  • Simmer until hot.
  • Put the semi chocolate chips into a bowl.
  • Pour the hot heavy cream over the chocolate chips.
  • Whip until the chocolate chips have melted.
  • Blend the two ingredients together.
  • Dip each cookie into the bowl of ganache covering 1 side of the cookie.
  • Sprinkle the red, white, and blue sprinkles on each cookie.

White Glaze Directions:

  • Add the confectioners sugar, milk, and vanilla in a mixing bowl.
  • Using an electric mixer, beat until smooth.
  • Dip the cookies into the glaze.
  • Cover one side of the cookie with the glaze.
  • Sprinkle the red, white, and blue sprinkles on top of the frosted cookie.
  • Set aside until ready to serve.

Notes

Store leftovers in an airtight container.
