Peeps Cupcakes

Peep cupcakes are a fun and festive dessert that is perfect for an Easter springtime celebration, they are perfect as an Easter dessert.

Ingredients

Cupcakes

  • 1 ⅔ cup all-purpose flour
  • 1 cup granulated sugar
  • ¼ teaspoon baking soda
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter; softened
  • 3 egg whites room temperature
  • 1 tablespoon vanilla extract
  • ½ cup sour cream
  • ½ cup whole milk

Buttercream Frosting

  • 1 tablespoon vanilla
  • 2 cups confectioner's sugar
  • 1 cup unsalted butter; room temperature
  • 1 tablespoon heavy whipping cream
  • 2 tablespoons Ghirardelli's cocoa powder
  • 10 oreo cookies; blended
  • 12 blue peeps bunnies

Instructions

For Cupcakes

  • Preheat oven to 350 degrees F. Place cupcake papers in a cupcake pan.
  • Sift the flour, sugar salt, baking soda and powder into a large bowl, and whisk together.
  • Separate the eggs. In another bowl, whisk together the wet ingredients until combined. The batter will be lumpy.
  • Add the wet ingredients to the dry ingredients. Mix cake batter on medium speed until combined.
  • Distribute the batter evenly into cupcake papers, filling each paper with about ⅔ the way up.
  • Bake for about 22 minutes or a toothpick comes out clean.

For Buttercream Frosting:

  • In a large bowl or bowl of a stand mixer, whip the butter and salt for about a minute.
  • Sift in the confectioner’s sugar in several batches beating on low after each addition. Scrape the bowl down and repeat the process.
  • Add a tablespoon of the cream while mixing on low then add the vanilla. Add in cocoa powder. Beat until you have an even, fluffy consistency.
  • Blend oreos in a food processor or blender.
  • Decorate cupcakes with chocolate icing and top with oreo crumbs, carrots sprinkles, and peeps bunnies. A toothpick can be used in the bottom of the peeps into the cupcake to help it stay in place.

Notes

  • You can make these using a boxed cake mix instead of homemade cupcakes from scratch.
  • Use a piping bag with a large icing tip to get the best swirls for cupcake frosting
  • Make sure all ingredients are at room temperature before beginning
  • Beat butter and sugar together for the frosting until light and fluffy, about 5 minutes
  • Sift dry ingredients together first to ensure a lighter texture in your cupcakes
  • If adding colors, use gel food colors for brighter results. Liquid food colors can be used but may not give you the desired intensity of color.

  • Add any other decorations to these festive cupcakes that you like! Some ideas are Easter eggs, jelly beans or even edible Easter grass.
  • You can use chocolate sprinkles in place of the oreo crumbs to make the "dirt".
  • Store leftover cupcakes in an airtight container at room temperature for up to 2 days. You can also freeze them for up to 3 months.
