Lime Poke Cake

This Lime Poke Cake is the perfect delicious and festive dessert for a spring gathering or St. Patrick's Day party.

Equipment

  • Large Bowl
  • electric mixer or hand mixer

Ingredients

  • 1 box of white cake mix plus ingredients on the back (water, oil, egg whites)
  • 1 3 oz. box of Lime Jello
  • 2 cups water
  • 8 oz. cool whip
  • 1 3 oz. package of white chocolate instant pudding mix
  • St. Patrick’s Day sprinkles

Instructions

  • Prepare cake in a 13 by 9-inch pan.
  • In a large mixing bowl, beat eggs, oil and water on medium speed and scrape sides of bowl often.
  • Pour batter in prepared sheet cake pan.
  • Once the cake has baked, allow it to cool completely.
  • Poke cooled cake for the gelatin to flow through.
  • In a medium sauce pan, bring 1 cup of water to a boil.
  • Remove from the heat and whisk in lime jello mix.
  • Add 1 cup of cold water, and stir to combine.
  • Poke holes all along the top of the cake. Pour jello into the holes.
  • Move to the refrigerator to chill overnight.
  • To frost, in a large mixing bowl, whisk together cool whip and white chocolate pudding mix.
  • Frost the cake, and sprinkle St. Patrick’s Day sprinkles over top.

Notes

Cake is fully baked when a wooden pick comes out clean. 
  • Make sure the cake is completely cool before adding the whipped topping.
  • You can use vanilla buttercream frosting or whipped cream frosting to change this up a bit.
