- 2 cups baking mix such as Bisquick or Jiffy
- ¾ cup applesauce
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ cup milk
- 1 egg
- 1 tablespoon oil
- 1 teaspoon cinnamon
Preheat oven to 400 degrees. In a bowl, mix egg and sugars together to combine.
Add baking mix, applesauce, oil, cinnamon, and milk until blended.
Put into a greased muffin tin or muffin tin lined with baking cups. Bake at 400 degrees for 15 minutes.
They are so light and fluffy. This recipe makes about 14-16 standard muffins.
