Coconut Lime Cupcakes
Easy coconut and lime cupcakes made from a boxed cake mix. Also includes a simple tutorial on toasting coconut on the stove-top.

- 1 box lemon cake mix
- ½ cup lime juice
- ½ cup water
- ½ cup melted butter
- 2 eggs
- 2-3 drops food coloring optional
Preheat oven to 350 degrees and prepare a cupcake pan with liners.
Combine cake mix and other ingredients in a large bowl.
Mix with a hand or stand mixer until well blended.
Pour into a prepared cupcake pan and bake 16-18 minutes.
Let cool before frosting.
