- 2 cups corn
- 12 oz cream cheese
- 2 tablespoons sour cream
- 1 4 oz can chopped or sliced jalapeños
- 1.5 cups Sharp Cheddar Cheese
- 1 cup Pepper Jack Cheese
- 1.5 tablespoons chili Sauce or salsa
- 2 tablespoon red onion chopped
- 1 clove garlic minced
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ½ teaspoon red pepper flakes
- fresh cilantro A few leaves for garnish
- 2 green onions sliced thin
Preheat oven to 350 degrees f.
Grease a small casserole dish with butter.
In a large bowl, combine cream cheese, sour cream, salsa or hot sauce, garlic, corn, chopped jalapeños, cumin, chili powder and chili flakes and mix until combined.
Fold in shredded pepper jack cheese and Cheddar cheese.
Pour dip mixture in prepared pan.
Add remaining ½ cup of Cheddar cheese to top of the dish.
Top with green onions and bake in hot oven for 20-25 minutes.
Top with cilantro and serve with chips.
