Hot Corn Dip With Jalapeños

Ingredients

  • 2 cups corn
  • 12 oz cream cheese
  • 2 tablespoons sour cream
  • 1 4 oz can chopped or sliced jalapeños
  • 1.5 cups Sharp Cheddar Cheese
  • 1 cup Pepper Jack Cheese
  • 1.5 tablespoons chili Sauce or salsa
  • 2 tablespoon red onion chopped
  • 1 clove garlic minced
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon red pepper flakes
  • fresh cilantro A few leaves for garnish
  • 2 green onions sliced thin

Instructions

  • Preheat oven to 350 degrees f.
  • Grease a small casserole dish with butter.
  • In a large bowl, combine cream cheese, sour cream, salsa or hot sauce, garlic, corn, chopped jalapeños, cumin, chili powder and chili flakes and mix until combined.
  • Fold in shredded pepper jack cheese and Cheddar cheese.
  • Pour dip mixture in prepared pan.
  • Add remaining ½ cup of Cheddar cheese to top of the dish.
  • Top with green onions and bake in hot oven for 20-25 minutes.
  • Top with cilantro and serve with chips.
