Ingredients

  • ½ cup butter softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon Vanilla extract
  • ½ cup pumpkin
  • 2 cup flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon pumpkin spice
  • ½ teaspoon cream of tartar
  • ¼ teaspoon ground cloves
  • for topping:
  • cup sugar
  • 2 teaspoons cinnamon

Instructions

  • In a large mixing bowl, blend butter and sugars until fully blended.
  • Add egg, vanilla, and pumpkin and combine.
  • Add dry ingredients gradually and blend well.
  • Chill dough for 20 minutes.
  • Preheat oven to 350 °
  • Prepare topping by blending cinnamon and sugar in a small bowl.
  • Roll dough into teaspoon-sized balls.
  • Roll in cinnamon-sugar mixture and place on greased cookie sheet.
  • Bake 13-15 minutes until bottoms of cookies are lightly browned with crisp edges.
  • Let cool 5-10 minutes on a wire rack before serving.

Notes

Store leftovers in an airtight container.
Use parchment paper to line baking sheet for best results
