Air Fryer Zucchini Fries
Lightly breaded zucchini sticks made in an air fryer for a healthy snack or side dish.

- 2 medium zucchini squash
- 2 eggs
- ½ cup panko crumbs
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- ½ teaspoon seasoning salt
- ½ teaspoon salt

Spray air fryer basket with a spray of oil.
Cut the ends of the zucchini off and then cut the zucchini first in half and then in fourths to make your zucchini slices.
Mix together panko and spices in a dipping plate. In another dipping plate, beat the two eggs.
Dip zucchini spears in the egg mixture.
Then dip into the breadcrumb mixture.
Set aside once all zucchini has been breaded.
Place zucchini fries in a single layer in the air fryer basket. Depending on the size of your air fryer, you may need to repeat this step twice.
Cook in the air fryer at 400 degrees f for 7 minutes. Turn sticks over and cook another 7 minutes at the same temperature. Depending on the size of your air fryer, you may need to repeat this step twice. Let the zucchini fries set for a minute or two on a paper towel or parchment paper.
