Simple Chickpea Salad

Ingredients

  • 1 can (15 oz) Chick Peas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • ½ bell pepper, chopped
  • ¼ cup chopped red onion
  • 1 cucumber, chopped
  • 1 tablespoon chopped parsley
  • 1 clove garlic, minced
  • ½ cup olive oil
  • ¼ cup cider vinegar
  • 2 tablespoons lemon juice
  • ½ teaspoon salt 

Instructions

  • In a large bowl, combine the chickpeas, tomatoes, pepper, onion, cucumber, parsley, and garlic. 
  • In a cup, mix together olive oil, vinegar, lemon juice, and salt.
  • Pour over salad and toss to coat well. 
  • Let stand for at least 15 minutes to allow the flavors to blend.
