Ingredients

  • 1 ⅔ cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • cup sugar
  • 1 tablespoon brown sugar packed
  • ¼ cup cocoa powder
  • ½ cup 1 stick butter, softened
  • 1 egg
  • cup milk or almond milk
  • 1 teaspoon vanilla
  • 2 overripe bananas peeled and mashed
  • ¼ cup semi-sweet mini chocolate chips plus additional for topping

Instructions

  • 1. Preheat the oven to 375 degrees. Prepare a 12-cup muffin pan with cupcake liners. Spritz liners with non-stick cooking spray.
  • 2. In a medium bowl, whisk together flour, baking soda, salt, sugar, brown sugar, and cocoa powder.
  • 3. In a large mixing bowl, whisk together bananas, eggs, vegetable oil, milk, and vanilla. Stir together wet and dry ingredients until just combined.
  • 4. Fold chocolate chips into the batter.
  • 5. Divide the batter into 12 muffin cups. Top with additional chocolate chips, if desired.
  • 6. Bake for 18 to 20 minutes. Allow to cool in muffin tin for 5 minutes before moving to cooling rack.
