Stuffed Zucchini Boats

These Easy Stuffed Zucchini Boats are not only easy to make, but they are also a nice low-carb dinner idea for summer.

Ingredients

  • 3 zucchini
  • ½ onion chopped
  • 1 8 oz. can tomato sauce
  • ½ lb. ground beef
  • 1 small tomato chopped
  • 1 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup cheddar cheese shredded

Instructions

  • Preheat oven to 400° F.
  • Grease a 13" x 9 " baking pan.
  • Cut zucchinis in half lengthwise and scoop out zucchini, leaving about ½ " of skin. Chop up the scooped zucchini and set aside. Place scooped "boats" into a baking pan.
  • In a skillet over medium heat, heat onions, and ground beef until beef is browned.
  • Drain ground meat and add tomato sauce, chopped tomato, oregano, basil, salt, and pepper.
  • To the skillet, add chopped zucchini.
  • Cook items in skillet 4-5 minutes.
  • Spoon cooked ground beef mixture into the "boats"
  • Top meat flilling with cheese.
  • Bake for 20 minutes.

Notes

For best results, use medium zucchini. Large zucchini may be cut in half twice.
Store leftovers in an airtight container in the refrigerator 3-4 days.
