Delicious egg and chorizo burritos

- 4 flour tortillas
- 6 eggs
- 3 oz chorizo
- 1 cup shredded cheddar cheese
Remove chorizo from the casing.
Place 3 ounces of chorizo (I use beef but you can use pork or soy too) in a non-stick frying pan and heat over medium-low heat until cooked through.
While sausage is cooking, beat eggs in a separate bowl until fluffy. Once the sausage is cooked, drain and fold in scrambled eggs. Stir pan consistently until eggs are cooked.
Remove from heat.
Warm up the flour tortillas. You can do this on the stove (can use a skillet or flat iron), or in the microwave.
Spoon egg and chorizo mixture into the tortilla and sprinkle with cheese. Roll up into a burrito. Be sure to tuck the bottom in, before you roll. Repeat with remaining tortillas and egg mixture.
