Old Fashioned Banana Bread

- 3 ripe bananas
- 2 eggs
- ⅓ cup sour cream
- ¼ cup sugar
- 1 ¾ cup flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup melted butter
- ½ cup chopped nuts
- 1 tablespoon brown sugar (optional)
- butter, shortening or oil for greasing pan
Preheat oven to 350°.
Grease a loaf pan with butter, shortening or oil
In a large bowl, peel and mash bananas.
Add to bowl with mashed bananas the remaining wet ingredients- eggs, butter and sour cream . Mix well with mixer on medium speed. Use a rubber spatula to scrape the sides of the bowl often.
Add flour, sugar, salt, baking soda, baking powder and nuts and blend.
Pour batter into loaf pan.
Sprinkle with brown sugar, if desired.
Bake for 1 hour or until toothpick comes out clean.
You can make this banana bread recipe without baking soda if you like. just omit it and add a tablespoon of baking powder to this recipe.
I like to mix the dry ingredients in a separate bowl first and then add to wet ingreients.
Store in an airtight container or covered with plastic wrap for 3-4 days.
You an freeze banana bread if wrapped in plastic wrap and foil.
