- 1 teaspoon olive oil
- 4 stalks celery, chopped
- ½ cup onion, chopped
- 3 medium carrots, peeled and chopped
- 4 cups chicken broth
- 1 cup water
- 1 cup orzo pasta
- 1 cup cooked chicken
- 2 cloves garlic
- 2 teaspoons salt
- 1 pinch pepper
- ½ teaspoon basil
- 1 teaspoon oregano
- 1 /2 lemon
Cook the orzo in a pot of boiling water per package directions
Add cold water to pasta. Drain and set aside
In a large stockpot, add oil over medium heat.
Add chopped onions, carrots and celery.
Saute until onion is clear.
Add chicken broth and water to the pot.
Add garlic, basil, oregano, salt and pepper.
Squeeze juice from ½ a lemon and add to the pot and add cooked chicken.
Bring the pot to boil.
Add cooked orzo pasta.
Reduce heat to medium-low and cook another 5-7 minutes.
