- 2 cups Penne pasta
- 3 tablespoons onions, chopped
- 1 medium cucumber
- ½ cup tomatoes
- 1 bell pepper
- ¼ cup olive oil
- 1 teaspoon yellow mustard
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1 tablespoon parsley, chopped
Boil penne pasta per package directions and drain. Set aside in a large bowl.
Wash all vegetables, chop and add to pasta.
Set Aside.
In a small bowl, mix together olive oil, mustard, salt, and pepper.
Blend completely.
Add olive oil to vegetables and pasta mixture coat gently.
Chill until ready to serve.
