Mixed Berry Muffins

- 1 egg
- 3 tablespoons oil
- ½ cup milk
- ¾ cup sugar
- 1 ¾ cups flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon vanilla extract
- 1 cup strawberries
Preheat oven to 375°.
while oven preheats, wash and remove stems from strawberries.
Drain strawberries and chop into small pieces. Sprinkle sugar on pieces and set aside. In mixing bowl, combine egg and oil.
Add salt, baking powder, flour sugar and vanilla.
Gently fold strawberry pieces into batter.
Bake in greased muffin tin 30-40 minutes.
