Mango Coconut Cake

Ingredients

  • 1 box white cake mix
  • 1/3 cup butter softened
  • 3 eggs
  • 1 cup of fresh diced mango or 1 15 oz. can of diced mango with juice
  • 2/3 cup shredded coconut
  • 20 Macadamia Nuts Chopped

Instructions

  1. Cream butter in a bowl.
  2. Add eggs and blend.
  3. Add cake mix and mix well.
  4. Fold in mango and shredded coconut.
  5. Bake in a greased 9 x 12 pan at 350ยบ oven for 30-35 minutes . or until toothpick comes out clean.
  6. Let cool.
  7. Frost with Buttercream Frosting (recipe below)
  8. Top with chopped Macadamia nuts.
